Ingredients
For the chickpea hummus we need:
- 500 grams of cooked chickpeas
- 50 grams of olive oil
- 1 or 2 cloves of garlic (to taste)
- 150 grams of tahini
- 1 tablespoon cumin
- Salt
- Pepper
- Sweet paprika
For the roasted vegetables we need:
- 1 carrot
- Variety of peppers of 3 colors
- Cumin
- Chimichurri
- Parsley
- Garlic powder
- Salt and pepper
- Oil
Preparation
- Blend the chickpeas with the oil and garlic cloves in a blender until a homogeneous mass is obtained.
- Add the tahini, salt, pepper, cumin and sweet paprika to taste and continue grinding until a smooth texture without lumps. If the mixture is too thick, a little water can be added.
- Transfer the hummus to a shallow dish and set aside while preparing the roasted vegetables.
- Preheat the oven to 200°C.
- Peel the carrot and leave it whole. Cut the peppers into strips about 2 fingers thick.
- In a bowl, mix the oil, salt, pepper, cumin, chimichurri, parsley and garlic powder. Add the vegetables and mix well so that they are covered by the dressing.
- Place the vegetables on a baking sheet and bake for 20-30 minutes at 180°C until golden brown.
- Remove the vegetables from the oven and place them on top of the hummus.
- To decorate, we can add some spiced chickpeas, seeds and flowers.
